egg pie

Ingredients

10 eggs

750 ml of milk

½ kg feta or chlorotyri (fresh cheese or mizithra)

150gr flour or semolina

Olive oil or butter for the pan and 2-3 tbsp. soup for the mixture.

If the cheese is not salty, you may need to add salt.

 

Method

In a bowl, we beat the eggs with the milk, then we rub the cheese with our hand and add it and the other ingredients. 
We bake at 180C degrees, top/bottom Heating, top rack, for about half an hour, until our pie is golden brown.

lemon cod with potatoes

Ingredients

1 sheet of cod (about 1.5 kg, salted)

6-7 potatoes (wedges large)

1 large onion

12-15 small onions, or 4-5 medium (cut into 4)

2 cloves garlic

200 - 250 ml olive oil

Pepper

Water

2 lemons

 

Method

We have removed the salt from the cod. (Salt cod must be soaked overnight before cooking to remove the salt. Place it in a bowl with cold water to cover and soak for 24 hours, changing the water three or four times)
Put the potatoes in the pot first, then we put the fish, evenly. Finely chop the large onion and garlic and add the small onions. Add the olive oil, pepper, and water until it is visible in our pot. We do not add salt because the fish itself is still salty. Boil until the potatoes are cooked, about half an hour and as soon as we turn it off, add the juice of two lemons.

oil - pie

The oil-pie is the traditional dessert of Meganisi.


Ingredients

or a 38 cm baking tray

 

1200ml olive oil

1500gr flour for all uses

25gr sesame

 

For the syrup

1200ml of water

1200gr sugar

2 teaspoons grated cinnamon

1/2 teaspoon grated cloves

3 tablespoons of honey

 

For the decoration

100gr sugar

1 teaspoon grated cinnamon

1/4 teaspoon grated cloves

 

Method 

Put all the ingredients for the syrup in a large saucepan, after it boils, leave it for five minutes. Be careful not to swell and remove the bubles that are created.

Then put the olive oil in a large pot and let it heat well (after it starts to smoke, let it for five minutes more). With quick stir, add the flour to the hot oil and mix well with a wooden spoon so that the flour does not burn. Lower the heat a little and work the mixture for about five minutes more, stirring constantly.

Then start adding the syrup. Important! be careful because it splashes and continue mixing. When you add all the syrup in the pot, take the pot off the heat and continue stirring until the syrup is fully mixed.

Spread half the sesame seeds in the pan and then we add our mixture evenly. On the top spread the sesame seeds and press the cake until is completley flat. Cut our cake into rhombus shape parts, if you want we can add peeled almonds, in the center of each piece.

Bake for 50-60 minutes in a preheated oven at 200 degrees on the heating elements or 160 degrees in the air.

In a bowl, prepare the mixture with the sugar, cinnamon and cloves. Once you take the oil pie out of the oven, sprinkle with the sugar mixture.

Leave the dessert to cool before serving.

 

You can also use the oil pie mixture without bakinhg.

Just create small deserts of halva with a tablespoon, and add sugar, cinnamon and cloves on the top
